Fritole - Fritule - Blinci
(Fritters)
Frittelle
is the Italian name for fritters. This dessert, however, is called
fritole (in Istrian Venetian and Istro-Romanian, fritule
and blinci in Istro-Slavic, and has a host of other names in
different parts of Italy. In Milan, they are called Chiacchiere.
Liguria and Piemonte have Bugie. The Marche region has Sflappe
and Frappe. They are also called
zeppole and have other names. Moreover,
the Dutch
variation is called oliebollen which literally means 'oil balls'
which, like the Istrian variety, is served also on New Year's Eve.
Fritole (sweet fritters) are
common in Venice during the period of Carnival. They are also a typical
sweet of the Istrian and Dalmatian regions. In Istria, they are
traditionally served for Christmas and Easter. They are a bit heavy,
but tasty, and go well with a good glass of medium sweet wine, either
red or white.
Fritole should be eaten the same day they
are made for they become heavy and stale very quickly. See also

In Italiano si dice "fritella"; in
Istriano "fritola" e "krapfen" o "krafne" in Croato, Sloveno ed
Austriaco. Si tratta di un dolce preparato ancora in molte famiglie e
che si trova anche nelle trattorie, soprattutto a Natale e a Carnevale.
Le fritole sono un pò pesanti, a dire il vero, perchè sono fritte
nell'olio, ma non occorre esagerare; basta gustarle ed apprezzarle.
Raramente sono consumate calde. Dalla temperatura dell'olio e dagli
ingredienti giustamente dosati dipende la loro riuscita.

Ingredienti:
- 600 g. (6 cups) di farina
- 450 g. (15.2 oz. or 2 cups) di latte
- 200 g. (1 cup) di zucchero
- 100 g. (3-1/2 oz. or a 4-oz. stick) di burro
- 35. g. (1 oz.) di lievito di birra
- 6 uova
- 140 g. (5 oz.) di uva sultanina
- 60 g. (2 oz.) di pignoli
- 60 g. (2 oz.) di rum (dark rum)
Mettere in ammollo l'uva sultanina,
sciogliere il lievito nel latte tiepido.
Mettere in una terrina le uova insieme allo
zucchero e agli altri ingredienti e sbatterle insieme fino a quando
risulta una crema ben soffice, poco alla volta unire la farina e
mescolare bene fino a quando diventa un composto ben omogeneo, coprire e
lasciare riposare al caldo per mezz'ora. Nel frattempo mettere sul fuoco
una pentola con olio abbondante, quando l'olio risulta ben caldo
immergere varie frittole aiutandosi con due cucchiai e farle cuocere
fino a quando vengono a galla e risultano ben dorate da ambo le parti,
scolarle, metterle su carta assorbente, quando e cospargere con zucchero
a velo.

Fritole della Venezia Giulia

Questa ricetta è l'identica di
quella seguente. Ingredienti:
- 500 g. di farina bianca
- 2,5 dl. di latte
- 80 g. di zucchero
- 50 g. di uvetta
- 30 g. di lievito di birra
- 3 uova
|
- 45 ml. (bicchierino) di rum
- 1 limone non trattato
- 1 pizzico di cannella
- olio per friggere
- sale
|
Fate ammorbidire l'uvetta in una ciotola con
acqua tiepida. Amalgamate in una terrina la farina con 50 g. di zucchero, il
lievito sciolto in un paio di cucchiai di latte, un pizzico di sale, la cannella
il rum, l'uvetta scolata e strizzata, la scorza del limone grattugiata fine e le
uova.
Aggiungete al composto il resto del latte, poco
alla volta, mescolando sempre nello stesso senso con un cucchiaio di legno
finché sarà omogeneo. Coprite il recipiente con un telo e lasciate lievitare in
luogo tiepido per un'ora circa o finché il composto avrà raddoppiato il suo
volume.
Scaldate abbondante olio in una padella per
fritti; versatevi il composto preparato a cucchiaiate e cuocete le fritole, a
fuoco medio per 5-6 mnuti o fino a quando saranno ben gonfie e dorate. Scolatele
con un mestolo forato man mano che sono pronte e passatele su un foglio di carta
asSorbente perché perdano l'unto in eccesso. Prima di servirle spolverizzatele
con lo zucchero rimasto.

Soften
the raisins in a bowl with lukewarm water. In a terrine, amalgamate the
flour with 50 g. of sugar, yeast that you have dissolved with some
tablespoons of milk, a pinch of salt, cinnamon, rum, raisins, chopped
lemon rind and eggs.
Add slowly this mixture to other milk, mixing. always in the same direction with a wooden tablespoon till it becomesa
homogeneous. Cover it with a tea towel and let it rise for about one hour
until it doubles in size.
Warm a lot of oil in a frying. pan; pour mixture
on it and cook fritole, on a low flame 5-6 minutes or till they turn are
inflated and turn a golden colour.
Drain the fritole and put them in a blotting. paper. Sprinkle them with confectioners sugar before serving.
Serves 8 persons.

- 1/4 cup rice
- l/2 teaspoon salt
- 2 liquid ounces (1/4 cup) lukewarm water
- 1 ounce yeast (1-1/2 cakes)

- 3-1/4 cups sifted all-purpose flour
- 1 teaspoon salt
- 1 large egg
- 2/3 cup water

liqueur, preferably rum or anisette
- 6 ounces seedless raisins
- 2 ounces pine seeds
- 2 ounces citron, cut into small pieces,
1/8 inch or smaller
- Cooking. oil
- Powdered sugar or vanilla

Pour the milk into a small saucepan and
bring. it to a boil. Add the rice and 1/2 teaspoon salt. Cook over low
heat for 30 minutes. Stir constantly toward the end of cooking. so that
the mixture does not burn. It should have a pasty consistency.
Disperse the yeast in the 1/4 cup
lukewarm water in a small bowl. Add a pinch of sugar and set aside. If
the yeast is fresh, bubbles should begin to form immediately.
Put the sifted flour and the 1 teaspoon
of salt in a large mixing. bowl and add the rice-milk mixture prepared
above. Mix with a wooden spoon. Add the egg. and stir it in. It need not
be beaten first. StilI stirring, add the yeast-water mixture and an
additional 2/3 cup water. Continue stirring. until the lumps have
disappeared and a very thick batter is attained. Bubbles should start to
form within the batter. Add the liquor or liqueur, raisins, pine seeds,
and citron. Mix everything. very well. Cover the bowl with a damp cloth
and pIace it in a warm spot, 80 degrees or so. Allow the batter to rise
for about 3 hours.
Fill a deep fryer or a saucepan half full
of good cooking. oil. Heat the oil to 375 degrees. If you don't have a
thermometer, test the temperature by dropping. small pieces of bread into
the oil. When they brown quickly, you are in the right temperature
range.
Be careful not to burn yourself during. the cooking. of the fritters. Wet a spoon with cold water. Scoop up about
2 tablespoons of the batter, moisten a thumb with water, and cautiously
push the batter off the spoon into the hot oil. Do this as close to the
surface as possible in order to prevent splashing, but not so close as
to burn your hand when the fritter bubbles upon contact with the hot
oil. Cook the fritter until it has an even deep golden brown color,
turning. it once or twice during. cooking. The fritter should be about 2
inches across. If larger or smaller, adjust the amount of batter
accordingly for subsequent fritters. Remove the fritter from the oil and
pIace it on a paper towel. Cut open this test fritter to make sure that
it is cooked through. If so, proceed as described above for the
remaining. batter, cooking. 4 or 5 fritters at a time. If not cooked
through, try another test fritter, cooking. it longer. If on longer
cooking. the fritter becomes too dark, reduce the oil temperature
slightly. PIace the cooked fritters on paper towels to cool.
When the fritters have cooled, roll them
in powdered sugar and place on a platter. They may be served as a
dessert or a snack.
Makes about three dozen.

In una casseruola, possibilmente dal fondo
rotondo, mettere la farina setacciata, il sale, i tuorli, lo zucchero, l'uva
passa senza il peduncolo, il burro fuso, meta della grappa e la scorza di limone
grattugiata. Sciogliere in un altro recipiente un pò di zucchero, il lievito in
1 dl. di latte tiepido e lasciare a fermentare in un luogo caldo. Quindi unire il
lievito alia farina e versare ancora tanto latte, quanto basta a fare un impasto
tenero (che si possa togliere con il cucchiaio). Mescolarlo bene e lasciarlo
lievitare per circa 30 minuti. Prendere la pasta con il cucchiaio e metterla a
friggere nell'olio fumante. Durante la frittura girare le frittelle piu volte,
affinchè siano ben rosolate da tutte le parti. Disporle poi su un piatto da
servizio, spruzzarle con la grappa rimasta e cospargerle di zucchero a velo.
Secondo i gusti si possono aggiungere all'impasto anche 200 g. di mele
grattugiate o tagliate a dadi.

Ingredienti:
- 400 g. di farina

400 g. di nocciole

10 g. di zucchero vanigliato

- 1,5 dl. di vino

- 20 g. di zucchero a velo

Macinare le nocciole e cuocerle nellatte per
circa 15 minuti. Aggiungere la farina e continuare la cottura a fuoco moderato,
mescolando continuamente. Lasciar raffreddare, poi unire le mele sbucciate e
grattugiate, la cioccolata fusa o grattugiata, l'uva passa, lo zucchero, lo
zucchero vanigliato, il sale, la scorza d'arancia e il limone grattugiato, il
vino, la grappa, il burro fuso e le uova. Mescolare bene il tutto, mettere
l'impasto sulla spianatoia e formare delle palline con la mano. Friggerle
nell'olio fumante, finchè non diventeranno di un colore marron chiaro da tutte
le parti. Metterle su di un piatto da servizio, cospargerle di zucchero a velo e
servire.

- 1 litro acqua
- 1/2 kg. farina
- 1/2 bicchiere grappa
- uvetta
- pignoli
- 150 gr. zucchero
Versare
¾ della farina nell’acqua bollente, girare tanto, lasciare raffreddare.
Poi aggiungere l’altro ¼ di farina, ½ bicchiere di grappa, poco sale,
uvetta e pinoli a piacere. Infine 150 gr di zucchero.
Dopo
avere ben mescolato, si mette 1/2 litro di olio in un tegame a fondo
piatto e si riscalda a fiamma media, poi si abbassa ulteriormente.
Con
l’ausilio di due cucchiai (uno di ferro ed uno di legno) si prende con
il cucchiaio di ferro una piccola porzione del preparato, che riempa
metà del cucchiaio e lo si modella con l’altro cucchiaio in modo da
farlo tondeggiante.
Quindi
si porta il cucchiaio di metallo a contatto con l’olio bollente e si
deposita la pallina (che può essere anche a forma ellittica o a
"gondoletta") nell’olio servendosi del cucchiaio di legno.
Si
ripete pazientemente l’operazione fino a quando tutta la superficie
della padella è piena, e si lascia cuocere per almeno 10 minuti,
ruotando le frittole periodicamente, dopo che la superficie si è
leggermente indurita.
Quando assumono un colore
dorato più o meno marcato, si controlla che tutta la superficie sia
almeno un po’ cotta, si estrae con un cucchaio ed una forchetta, lo si
scola dall’olio e lo si mette sulla carta per alimenti posta su un
piatto vicino.
Quindi
si continua a mettere nuove frittelle da una parte e ad estrarre quelle
più cotte dall’altra, fino a quando non sono tutte cotte.
Poi
si spostano le frittole asciugate sulla carta assorbente su un piatto di
portata e si lascia cadere sopra di esse un po’ di zucchero a velo.

sbattere l'impasto per 30 minuti, poi incorporarvi il rum e tirare nella
massa l'uva e i pignoli. Riscaldare l'olio in padella e con un cucchiaio
di metallo bagnato d'acqua calda prendere la massa a cucchiaiate e
friggere lentamente nell'olio, coprendo la padella. Cosi, senza
aspettare la lievitazione, le frittelle non s'inzuppano d'olio.

Ingredienti:
- 3 uova
- 30 g. lievito
- 400 g. farina
- cannella
- latte
- una buccia di limone
- rhum
- 50 g. zucchero
- 50 g. uvetta
- 40 g. pignoli
Sciogliere in una tazza il lievito con un
cucchiaio di zucchero, un pò di farina e del latte tiepido. In una terrina
mettere la farina, le uova, la cannella, un pizzico di sale, la buccia di
limone, un pò di latte (non freddo), lo zucchero ed un bicchierino di rhum, le
uvette ed i pinoli. Unirvi poi il lievito e sbattere poi a lungo con un
cucchiaio di legno. Coprire, lasciar lievitare al caldo e poi lavorare
nuovamente. Riscaldare l'olio per friggere e a cucchiaiate versarvi
l'impasto. Appena cotte, le fritole vanno posate sulla carta assorbente e
spolverizzate con zucchero a velo.

- 100 g. Rosinen
- 200 g. Zucker
- 80 ml. Grappa
- 500 g. Mehl
- 2 Eier
- 250 ml. Milch
- Salz
- 1 Würfel Hefe (42g)
- 75 g. weiche Butter
- Öl zum Frittieren
- 1 EL gemahlener Zimt
Zubereitung:
Die Rosinen über Nacht in Grappa einlegen.
Mehl in eine grosse Schüssel sieben und in die Mitte eine Mulde
drücken. Die Hefe mit 30 g. Zucker und 125 ml. lauwarmer Milch auflösen.
Die Hefemilch in die Mulde giessen, mit etwas Mehl mischen und zugedeckt
an einem warmen Platz 15 min. gehen lassen.
Die restl. Milch mit 70 g. Zucker lauwarm erwärmen. Eier zugeben,
verrühren und mit der Butter 1 Prise Salz zum Vorteig. geben. Mit dem
Knethaken zu einem glatten Teig. kneten und zugedeckt. 4 Std. ruhen
lassen.
Die Rosinen mit dem Grappa unter den Teig. kneten. Öl auf 160 Grad
erhitzen, einen Esslöffel ins heisse Fett tauchen und Nocken abstechen.
Diese im Fett goldbraun ausbacken. Den Vorgang. wiedeholen, bis der Teig. aufgebraucht ist. Zucker/Zimt-Mischung. herstellen und die Krapfen darin
wenden. Heiss servieren.
Zubereitungszeit: 40 Min.
Weinempfehlung: Baglio Florio Vergine Riserva Oro, ein Marsalawein
aus Sizilien

which is sold by weight)
- 2 cups self raising. flour
- 2 eggs
- half a cup of milk
- 1 cup of sugar
- 1 teaspoon of pure vanilla essence (or 1 vanilla sachet)
Put all together in a bowel and mix by
hand with a wooden spoon until all ingredients are smoothly combined.
Use a teaspoon to spoon mixture into oil
and fry as per normal fritole.
When cold dust with icing. sugar.

Opis:
Napraviti u lončiću kvas od 30 g. kvasca
(pjenice), malo tople vode i brašna koliko treba i ostaviti da se diže.
U zdjelu prosijati jedan i pol kg. brašna, u sredini napraviti rupicu, u
nju usuti kvas i doliti malo osoljene i toliko tople vode da se tijesto
uzmogne lako lupati žlicom. Tijestu se dodati čašicu rakije, malo
mištrala, 3-4 žlice očišćenog. suhog. grožđa, nastrugane limunove kore i
šaku isjeckanih badema ili oraha. Tijesto žlicom lupati dok ne počne
praviti mjehuriće i ostaviti ponovo 1 sat da se diže. Uliti otprilike 1
litru ulja u posudu da se zagrije, tijesto stisnuti u šaku i pustiti da
izlazi iz ruke između palca i kažiprsta, a žlicom u drugoj ruci
oblikovati se fritule od tijesta i stavljati u vruće ulje da se prže dok
se ne zarumene. Vaditi ih rešetkastom žlicom da se što bolje ulje
ocijedi. Dok se fritule prže mora biti obilato ulja u posudi i mora
neprestano vriti. U posudi ne smije biti mnogo fritula najedanput da se
mogu slobodno prevrtati, kad se posudom malo potrese, da se fritule same
u ulju okreću. Fritule se također prave, odnosno oblikuju i samom žlicom
i stavljaju u kipuće ulje, ali žlicu valja prije umočiti u ulje ili
vruću vodu da se uz nju ne bi prilijepilo tijesto. Čim su fritule
popržene, pospu se vanilin-šećerom u prahu i tople posluže. Ohlađene
ožilave.

izlupati i ostaviti da se diže 1 sat. U duboku posudu za prženje uliti
litru ulja, staviti na vatru da se dobro zagrije i žlicom stavljati
tijesto da se prži. Ispržene i vruće fritule posuti vanili šećerom.

- 8 cups vegetable/sunflower oil (2 liters)
- Powdered sugar
- Ground cinnamon

Preparation:
In a small bowl, mix the teaspoon of sugar into 1/2 cup (120 ml) of
hand-hot water. Sprinkle the yeast on top and allow to stand for 10
minutes (if the yeast doesn't bubble, discard and buy new yeast as
it means the yeast is no longer active). Stir to combine.
Mix together the flour and sugar in a large bowl and make a well
in the middle. Add the eggs as well as the yeast mixture. Warm up
milk in the microwave (it should be lukewarm). Add half of the milk
to the well in the flour and mix until all ingredients are combined.
Add the rest of the milk and whisk until smooth.
Cover the bowl with a damp dish towel and allow to rise in a warm
area for about an hour. Once the dough has doubled, stir in the salt
(and fruit, if using).
Heat the oil in a large, deep pan or in a deep fryer. To check
whether the oil is at the right temperature, stand the handle of a
wooden spoon in the oil. If little bubbles form around it, the oil
is ready.
You will need two tablespoons to form and handle the dough, as
well as a slotted spoon to remove the 'oliebollen' from the hot oil.
Quickly dip the two tablespoons into the oil and form small balls of
the dough with the oiled tablespoons, carefully scraping and
dropping the dough into the hot oil. The 'oliebollen' will sink to
the bottom of the pan and then pop right back up. You should be able
to fry at least 6 'oliebollen' at a time, but don't crowd the pan
(see Tips below). Fry until golden brown on both sides, carefully
flipping when required. Drain on a tray lined with paper towels.
Sieve powdered sugar over the 'oliebollen' as well as a dusting
of ground cinnamon, and serve warm.
Tips:
Don't store the uncooked dough for more than an hour or two
(covered with a damp dish towel), because the yeast will remain
active. Instead, make and fry the dough as needed.
If the fritters are uncooked on the inside, the oil is either
too hot or too cold. The oil should not be hotter than 350 degrees F
(180 degrees C). Oil that is too cold is the result of frying too
many 'oliebollen' at one time.
Allow leftover 'oliebollen' to go stone cold and then store them
in an airtight container at room temperature. They will keep for
approximately two days.
Leftovers can be warmed in a preheated oven at 390 degrees F
(200 degrees C) for 15 minutes or in the microwave on high (850
Watt) for 20 to 30 seconds.
Leftovers can also easily be frozen and will keep in the freezer
for about 2 months. To eat, allow to defrost and then warm as above.
